Fossé Saint Ange is a semi-gastronomic restaurant in Richelieu, set in a dining room lined with period wood panelling. The kitchen, led by chef Collis, focuses on fresh, local ingredients prepared simply but with precision. Everything is made in-house, from the bread to the desserts, and the menu changes with the seasons and the market.

The restaurant has earned a Michelin Bib Gourmand for 2026, a recognition that rewards good quality, good value cooking. The plaque is displayed at the entrance, a quiet signal of the consistent, thoughtful work happening inside.

What to expect on the plate

The menu is short and intentional. A summer carte might begin with a tartare of royal sea bream with wakame seaweed, or white asparagus from Patrouillault with a mousseline sauce and candied orange peel. Mains could include roasted lamb saddle in a nori crust with spicy date condiments, or confit pork breast with pea purée and Choron sauce. Desserts range from a chocolate crémeux with streusel and green apple sorbet to a lemon palet with verbena ice cream and Timut pepper.

A three-course menu (starter, main, cheese or dessert) is priced at €39; the full four-course option at €46. The cooking is grounded in French tradition but open to subtle, unexpected accents—yuzu butter, galangal coconut milk, nori crust.

A place that feels like home

The atmosphere is warm and unpretentious. Guests are welcomed into a space that feels both historic and lived-in. From May to September, when weather permits, service moves to the garden terrace (note: there are eight steps down). Regulars mention the hospitality of Collis and Johann, whose occasional opera singing has become a cherished quirk for returning diners.

Fossé Saint Ange is open for dinner Wednesday through Sunday, with lunch service on Friday, Saturday, and Sunday. Reservations are recommended, especially during the summer months.
