The kitchen and its founders

La Maison operates as a focused bistro in Rodez, guided by chef Luc Pourrat. He brought his training from the École Vatel and his time at the Hôtel Costes to design a compact menu built around shared small plates. Working alongside front-of-house manager Chloé Tatin, he keeps the service light while allowing precise execution across every order. Guests at this modern bistro find a straightforward structure that favors quality ingredients over heavy traditions.

The kitchen prepares each dish with clear attention to balance. A chilled bass ceviche arrives dressed with sea beans and fresh cilantro, while tataki-style beef carries a light soy sugar glaze. Vegetarian plates layer roasted eggplant, smooth hummus, and ricotta mousse into a single serving. All items follow a straightforward bistro philosophy that prioritizes clean technique and reliable recipes.

Space and setting

The dining room occupies a two-story house built in the 1930s. Jungle carpets and painted murals cover one floor, while raw plaster walls define the space below. A compact gravel courtyard sits outside, shaded by young palm trees and frequently filled with locals ordering from the terrace. The property recently earned a listing in the Le Fooding guide, reflecting how the contrasting interiors and outdoor layout have settled into place.

A funny two-story house from the 1930s, with jungle carpets and murals on one level and unfinished walls on the other. As a bonus, there’s a small gravel courtyard with palm trees, where Rodez’s finest eat their hearts out. Luc Pourrat (formerly of the École Vatel and the Hôtel Costes) and Chloé Tatin (front-of-house) opted for a tapas menu, featuring well-known but well-made recipes (vegetarian lasagna, crispy chicken, red berry pavlovas…). We left feeling anything but disappointed after a bass ceviche marinated fresh (and not overpowered by lemon), touched up with sea beans, scallions and cilantro; a sunny vegetarian triptych of tender eggplant, hummus and ricotta mousse; an ample platter of tataki-style marinated beef, lightly caressed by a soy sauce / sugar / sesame oil seasoning; and, straight from the Clot pastry shop, a stacked praliné, chocolate and caramel dessert. // Adrien Nouvaire
