The story

Populus Rodez: Seasonal French Bistro by Chef Louise Canonici

The kitchen and the partners

At Populus in Rodez, Chef Louise Canonici runs a seasonal French bistro recognized in the Le Fooding guide for 2026. The guide highlights the effective collaboration between Canonici, who trained under Hélène Darroze, Michel Bras, and Michel Sarran, and Sébastien Mathieu, a former electrician who co-founded the venue in September 2023. The team describes the operation as a "declassified" bistro centered on terroir, fresh products, and homemade cooking. Canonici keeps the menu compact and updates it frequently, drawing on long-term relationships with local growers met during weekly visits to the Rodez market.

Local produce and signature plates

The kitchen translates market finds into dishes such as an ajo blanco topped with flaking confit Albacore tuna, parsley oil, kasha, green beans, basil, and sun-sweet tomatoes. Other options feature veal breast braised until melting, scattered with pickled mustard seeds and served with butternut squash purée, carrot purée, roasted zucchini, new potatoes, and a parsley-lemon relish. Dessert presents a Fontainebleau marbled with stewed blood nectarine from grower Yannick Colombier, accompanied by shortbread. These preparations show how the bistro balances classic techniques with the quality of regional ingredients.

Bright rooms and natural wines

Sunlight streams through a skylight positioned above the open kitchen, illuminating pale wooden tables and a matching bar. Still-life paintings celebrating food hang on the walls, while exposed ventilation ducts run across the ceiling. An upstairs dining room provides additional space for gatherings. The beverage program supports the cooking with a broad selection of wines produced using organic, biodynamic, or natural methods. A terrace extends the seating area when the weather allows, completing the experience at this French bistro.

What more could you ask for? The people have spoken: Populus, by Jove! Back in September 2023, chef Louise Canonici (a graduate of the Hélène Darroze, Michel Bras and Michel Sarran schools of excellence) joined forces with Sébastien Mathieu, a former electrician turned sharp-eyed restaurateur, to take over what was once Potos 12. The setting is bright and unfussy: pale wood tables and bar, still-life paintings devoted to food, gleaming exposed ventilation ducts, a skylight peering down on the open kitchen, plus an upstairs dining room for lingering. With long-term partnerships with local producers, their sourcing game is spot on and honed weekly at Rodez market – resulting in cooking that’s local, precise and deeply satisfying. And to prove it: a rich and creamy ajo blanco topped with flaking confit Albacore tuna, parsley oil, kasha, green beans, basil and sun-sweet tomatoes; veal breast braised to the point of collapse, scattered with pickled mustard seeds and flanked by butternut squash and carrot purée, roasted zucchini, new potatoes and a parsley-lemon relish to keep things lively; and finally, a textbook Fontainebleau marbled with stewed blood nectarine (from star grower Yannick Colombier), plus shortbread for full surrender. · Aya Bouriole
