In the historic heart of Rodez, just steps from the Musée Soulages, Restaurant Hervé Busset occupies a stone townhouse that balances old-world charm with refined, modern touches. Hervé Busset describes himself as a "cuisinier-cueilleur"—a cook who gathers. His inspiration comes directly from the fields and forests of the Aveyron region, where he forages for wild flowers, herbs, and plants. Guided by ethnobotanist François Couplan, Busset learned the secrets of edible wild plants, and he now brings these finds into his kitchen daily. The result is a modern cuisine that is instinctive, creative, and deeply connected to nature.
That connection earned him a Michelin star in 2007, a recognition he has held ever since. In his cooking, the plant is never an afterthought—it elevates the main ingredient. Each preparation and cooking method is chosen to preserve and highlight natural flavours, while the colours borrowed from the landscape make every plate a discovery.
The restaurant’s menu changes with the seasons, reflecting what the chef finds on his walks. There are no fixed signatures, only a constant dialogue between the wild larder and the plate.
