The story
In the heart of the Landes, in the 13th-century bastide of Saint-Justin, Antoine Latry and Coralie Gauvrit run Les Allées. This Michelin-recommended restaurant combines the spirit of an old café with contemporary touches, creating a warm, unpretentious atmosphere. A luminous entrance leads past a tiled counter to the dining room, while an inner patio offers a mineral-and-plant setting for a pre-dinner drink or a lingering finish to the meal.
Antoine Latry’s cooking is shaped by six years in Santander, Spain, and the trust he built with Chef Jean Cousseau at Relais de la Poste in Magescq. Coralie Gauvrit, whose pastry career took her from Brittany through the Alps to the Landes, brings a refined sweet touch to the table. Together, they champion local, seasonal produce sourced from young regional producers and the market in Roquefort. Everything is made in-house, visible through the large glass window that opens onto the kitchen.
The menu changes with the seasons. Standout dishes include grilled octopus, veal sweetbreads pan-fried in butter, and a chocolate dessert that plays with corn. A tasting menu is available on weekends and evenings.
Before opening Les Allées, Antoine and Coralie revived the family recipe for Pastis d’Armagnac, a traditional Landes cake flavoured with vanilla pods infused in young Armagnac. Golden, crisp on the outside and tender within, it appears on the menu in a 2.0 version and is also available to take away.
Les Allées’ modern cuisine and commitment to local sourcing have earned it a place in the Michelin guide, confirming its status as a destination for bistronomy in the Landes.
