The story
At the five-star Relais & Châteaux hotel La Cheneaudière, between Strasbourg and Colmar, chef Jean-Paul Acker leads the gastronomic restaurant Le Feuillage. In March 2025, the Michelin Guide awarded the restaurant its first star, recognising high-quality cooking that is refined, creative and subtle. The 2026 Gault & Millau guide also gives it 14/20 and two toques, and named Acker a “Grand de Demain” in 2024.
Acker’s path to this point is rooted in family kitchens. Born in Colmar in 1992, he grew up with a baker grandfather and parents who tended a vegetable garden and orchard, instilling in him a respect for flavour and produce. After training at the CFA in Colmar, he joined La Cheneaudière at 18, working under chefs Roger Bouhassoun and Daniel Stein. He became their sous-chef at 24, then left for Provence to work at Michelin-starred Relais & Châteaux Le Prieuré and later as sous-chef to Glenn Viel at Oustau de Baumanière, where Viel earned a third star. In spring 2021, Acker returned to La Cheneaudière to take over the kitchen.
Le Feuillage is the restaurant’s fine-dining address, serving modern cuisine as a sensory experience in an elegant setting. The hotel also offers Le Chêne, a more casual gourmet restaurant, and the cosy Le Calixte bar. Acker now leads a team of 20, offering tasting menus that showcase his precise, product-driven style. The restaurant is part of a family story that began in 1974, when Arlette and Marcel François opened La Cheneaudière with ten rooms; it joined Relais & Châteaux within six months and earned its fifth star in 2017.
