Just outside Rouen, in the quiet suburb of Isneauville, Préambule is the expression of Chef Thibault Foulogne’s craft. His cooking is shaped by years spent in Michelin-starred kitchens, yet the result is anything but stiff. Here, modern cuisine is guided by the product and the season, balancing French tradition with contemporary creativity. The Michelin inspectors have recognised this sincerity, awarding Préambule a Recommended distinction for 2026.
The kitchen offers several ways to experience the chef’s work. The Dégustation menu is a seven-step journey through his current inspirations. For lunch, the Déjeuner menu provides a more accessible pause without sacrificing finesse. The Signature menu showcases the chef’s strongest associations of the moment, while the Éphémère menu changes weekly, adapting to the freshest arrivals from local producers. Each plate plays with texture, colour and emotion, aiming for a delicate and memorable experience.
The dining room is intimate and warm – “feutrée et chaleureuse” in the restaurant’s own words. Service is attentive but unhurried, and there is outdoor seating for warmer months.
