The story
Aurélie and Xavier Taffart welcome guests to L'Aquarelle in Breuillet, just outside Royan in Charente-Maritime. Since 2010, the restaurant has held a Michelin star for its high-quality cooking, a recognition that reflects a steady commitment to contemporary cuisine built on local ingredients and the flavours of the Atlantic coast.
The kitchen, led by Chef Xavier Taffart, draws from the immediate surroundings – the salt air, the markets of the region, the seasonal catch and produce. This is not a cuisine that reaches for novelty for its own sake; it is grounded in what the land and sea offer, transformed with precision and a clear, modern sensibility.
The dining room is part of a small, intimate hotel with just three rooms, each with its own character built around colour and comfort. The atmosphere is personal and unhurried, a space where the meal is the centre of attention. The wine list is thoughtfully chosen, and the restaurant caters to private parties and events.
L'Aquarelle is closed Sunday evening, all day Monday, and Tuesday lunchtime; it opens on Sunday evenings in July and August. Parking is available, and the restaurant is wheelchair accessible.
