The story
Gaëtan Bourcin brought his expertise from the kitchen of Le Nessay to launch La pâtisserie du Nessay on the coast of Saint-Briac-sur-Mer. This dedicated French pastry shop quickly earned a spot on the 2026 Le Fooding list, recognized for its precise technique and seasonal creativity. Visitors gather at the counter to watch him assemble delicate layers of puff pastry and temper dark chocolate for his signature creations. The space operates as a streamlined atelier where every tart and cookie reflects his training in classical French patisserie.
The Tropical Guava pastry combines guava mousse with a sharp lemon caramel core and vanilla panna cotta resting on a fleur de sel shortbread base. Another favorite, Je Craque, disguises a creamy rice pudding and salted caramel filling beneath a crisp dark chocolate shell that mimics an ice cream bar. Regulars also order the light millefeuille alongside diamond-shaped shortbreads and plump financiers baked fresh throughout the morning. When the weather turns warm, guests often choose organic Breton Mademoiselle Fayel ice cream to complement their selection.
