Norman by birth, Breton by choice – Nicolas Adam’s path to La Vieille Tour began with a formative stint under Patrick Pignol at the Relais d’Auteuil, followed by four years as chef de cuisine in Portland, Oregon. That transatlantic experience, he says, gave him the confidence to return to France and open his own restaurant, “to let his culinary sensitivity run free.” He fell for the diversity of Breton produce and found his home port in Plérin. For 20 years, together with his wife Solange, he has steered La Vieille Tour, earning a Michelin star in 2003 – a distinction the restaurant has held ever since, most recently confirmed in the 2026 guide.

A Cuisine of the Sea

The menu is a direct expression of the chef’s marine roots. “As a child I already dreamed of having you at my table to charm your taste buds with the sea spray of a marine cuisine,” Adam writes. That dream translates into refined, generous modern cuisine built on local ingredients. Starters like pan-seared langoustines with pea mousseline and smoked bacon foam, or duck foie gras with rhubarb compote and spiced toast, set the tone. Main courses follow the same rhythm: low-temperature cod with verde risotto and mussel-tartare, or pan-fried pollack with artichoke, olive-anchovy condiment, and roast bone jus. The “Tentation” menu, at six courses, features the chef’s noblest products, while the weekday lunch-only “Marché” menu offers a three-course snapshot of the market.

The Dining Experience

The restaurant’s nautical motif is playful but never forced: “Take a seat aboard and let yourself be carried away,” the website invites. The wine cellar is called “La mer à boire” – the sea to drink – and the atmosphere is both warm and polished. Vegetarian and vegan options are available, and the kitchen accommodates allergies with care. Adam’s cooking is precise, seasonal, and deeply rooted in the coast around Saint-Brieuc – a place where the sea is never far from the plate.
