The story

Les Filles en Bottes Saint-Georges-de-Reintembault | Organic French Dining

The kitchen and its founders

Les Filles en Bottes sits quietly outside Saint-Georges-de-Reintembault, where organic cooking follows a strict single menu shaped by daily harvests and local suppliers. Lénaïck Geffroy joined after stints at Bierbuik and Le Nessay, while Louise Lefèbvre manages the dining room and soil following her time at Jardins de la Matz. Their grounded approach secured a place on the 2026 Le Fooding guide, which highlighted how they translate rural Brittany into honest plates. Every ingredient carries a known history, tracked from the field directly to the table.

Seasonal plates and techniques

Diners receive one evolving menu rather than a traditional list, keeping the focus squarely on seasonal produce. Recent preparations featured earthy cooked red beets paired with raw Chiogga varieties and blueberry-tinged ricotta, alongside pillowy ravioli filled with onions and carrots. This approach to French cooking balances vegetable-forward compositions with careful protein choices, like delicate beef or a helianthus tuber version served with orge and green pesto. Even desserts lean into texture contrasts, combining meringue, nutty buckwheat and coastal dulse.

The dining room and garden setting

Meals unfold beneath a ceiling scattered with pressed dried flowers, anchored by a working wood-burning stove during cooler evenings. The rustic dining area flows directly into an orchard and vegetable garden maintained by Lefèbvre herself, reinforcing the link between outdoor labor and indoor service. Guests often gather around shared tables near the hearth, creating a relaxed environment that fits the straightforward ethos of this regional cuisine. The adjacent gîte extends the stay for visitors who want to linger.

These two rainboot-clad filles will terroir -ize you, in the most delicious way! Deeply rooted in the Brittany countryside, Lénaïck Geffroy (ex-Bierbuik and Le Nessay) and Louise Lefèbvre (ex-Jardins de la Matz) have perfected the art of rural hospitality. At their bucolic gîte , nestled among an orchard, a vegetable garden and a rustic table d’hôte -style restaurant, Lénaïck works her magic in the kitchen, while Louise tends to both the guests and the market garden. The last time we went, squeezed together around the wood-burning stove alongside their dog Paco, beneath a ceiling strewn with dried flowers, we had all of the following: a very earthy dish of cooked red beets, raw Chiogga beets and ricotta tinged purple by blueberry coulis; delicate Provence-style beef (or a vegetarian version prepared with helianthus, a tuber similar to sunchoke), served with pillowy ravioli stuffed with ricotta, onions, carrots and herbs; followed by a fabulous composition of meringue, dulse (red seaweed), buckwheat, lemon and a second type of seaweed with a nutty flavor… Another time, the menu featured squid and onion tempura with sauce gribiche and bitter greens, or spinach, turnips and polenta with turnip-top pesto and a rich jus. · Megan Linard
