The story
L'Inattendu, on avenue de la Plage in Saint-Gilles-Croix-de-Vie, lives up to its name. Set among houses and holiday homes, it surprises with refined, market-driven cooking that earned a Michelin Recommendation for 2026. Owner Pascal and chef Paul lead a team focused on simple, honest food built around fresh local ingredients and a pronounced vegetable presence.
The kitchen changes the menu daily based on what local producers offer. Their guiding principle is "cuisine vivante et de l'instant" – living, of-the-moment cooking. Each plate draws on the surrounding vegetation and forests, giving the modern cuisine a distinctly earthy, herbaceous identity. The strong vegetable influence runs through every course, from starters to desserts.
Pascal brings 31 years of restaurant experience and a palpable warmth to the front of house. Chef Paul, originally from South Touraine, trained alongside Amélie and Nicolas Coutand at Les Genêts before bringing his vibrant style to the Vendée coast. His cooking is both creative and grounded, balancing technique with respect for the raw product.
The Michelin guide highlights dishes such as sturgeon with endive and kombucha, a savoury pork belly cooked for 48 hours with sweet potato and hibiscus, and a dessert of chocolate, caramel and saffron. The kitchen excels in small touches: hibiscus, saffron and lemon gels, house-made ice creams and mousses. Everything is made in-house, including stocks, powders, and compost from peelings and trimmings.
Sustainability is integral. The team recycles as much as possible, turning scraps into broths, powders, or compost. This philosophy shapes the restaurant's relationship with its suppliers and the local environment.
