The story

Denen Kanttua: A Grounded Basque Kitchen in Saint-Jean-de-Luz

Founders and Culinary Direction

Denen Kanttua brings a grounded approach to Basque cooking to Saint-Jean-de-Luz. Chef duo Mathilde Denuncq and Julien Rivoiron lead the kitchen at this corner bistro, which recently earned a spot on the Le Fooding list for its lively plates. Fanny and François Lemarié founded the space three years after closing their previous Biarritz location. They named the establishment after the local phrase meaning everyone’s corner.

Plates from the Basque Pantry

The kitchen draws heavily from traditional Basque recipes to build its daily offerings. Guests often start with a crisp blood sausage croquette served alongside the bar counter. Main courses highlight silky corn soup brightened by sauce vierge or delicate skate fillets dressed in a caper heavy grenobloise. A fig tart finished with raw cream rounds out the menu, while monthly pop ups introduce new preparations.

The Room and Everyday Atmosphere

Visitors settle into timeworn banquettes placed over old fashioned tomette tile floors. Formica topped tables provide a casual surface for sharing plates throughout the evening. The space maintains a quiet energy that shifts easily between daytime coffee and weekend dining. Counter seating aligns with the casual layout designed for relaxed shared meals.

And they’re back for round two! Three years after leaving their Biarritz spot, Fanny and François Lemarié (ex-Chéri Bibi) are back in action at a brand-new Basque joint, in Saint-Jean-de-Luz this time around. And they’re reviving the feasting spirit and the ghost of good times at this corner bistro named Denen Kanttua (“everyone’s corner”), which boasts old-fashioned tomette tile floors, timeworn banquettes and Formica-topped tables. But the wines are very much alive and the dishes vibrant! The night we went, all of the following was prepared by the chef duo Mathilde Denuncq and Julien Rivoiron: a tantalizing blood sausage croquette for the apéro ; silky corn soup with sauce vierge for a bright pop of color; skate with buttery, lemony, caper-heavy sauce grenobloise ; breaded eggplant, prepared Milanese style and cooked to such golden perfection that even a meat-lover would drool contemplating it… Also eyeballed on nearby tables: a fig tart with a dollop of raw cream, victim of its own success when it was our turn to order… Boo! FYI: the team does pop-ups one Saturday night a month. // Rose Clince
