The story
Fargeot in Saint-Jean-de-Luz serves a grounded version of Basque cooking under the direction of Elsa Marie and Julian May. Both cooks previously shaped menus at La Vierge in Paris and Providence in Guéthary. Their French coastal cuisine relies on straightforward techniques rather than heavy styling. The restaurant sits tucked away from the Atlantic swell, protected by a crushed raspberry painted exterior. Inside, a solid wooden bar anchors the room while narrow banquette seats line the walls. Guests watch their meals arrive directly from the open kitchen. This counter dining format removes any barrier between the staff and the tables.
Diners often start with thin slices of cecina dressed with fiery organic guindilla peppers. A baked socca follows, heavily topped with smoked eggplant and fresh herbs harvested from their garden. Later courses feature plump cappelletti filled with ricotta and tomato, or roasted chicken glazed in its own juices alongside Landes corn and girolles.
