The story

Maitenia Saint-Jean-de-Luz: Contemporary Bistrot Dining by the Coast

The kitchen and its team

Maitenia brings a refined French bistrot approach to Saint-Jean-de-Luz through the hands of chefs Fréderic Vilgicquel and Hugo Carre. Their kitchen operates alongside the daily rhythms of Notre Sélection, shaping a menu that defines contemporary French cooking. This partnership focuses on fresh produce and straightforward techniques rather than heavy sauces. The setup earned a spot on the 2026 Le Fooding guide after visitors noted how cleanly executed every plate runs.

Seasonal plates and coastal flavors

Line-caught hake arrives resting in a warm salmorejo alongside steamed eggplant and purple basil. Butternut squash velouté gets balanced by a soft-boiled egg while the chicken dish pairs creamy vin jaune sauce with sweet peppers and polenta. This coastal French cooking shifts toward smaller plates like octopus à la gallega or Mexican-style tuna during evening service. Each preparation relies on precise timing to let the ingredients speak.

The space and service rhythm

Marble tables and a curved green bar anchor the dining room where guests often choose counter seating. Exposed stone walls meet original 1970s floor tiles that keep the volume bright without feeling stiff. Large windows open toward the square outside so daylight spills across the organic produce displayed near the entrance. Guests order directly from the staff, who track table turnover and wine pairings with quiet precision.

Sébastien Juanicotena and Maxime Berdou, the owner and shopkeeper of the Saint-Jean-de-Luz wine shop Notre Sélection, brought their corkscrews to a space across from the Fronton de Ciboure, to the emblematic Maitenia – 1970s tiling, exposed stone walls, marble tables and a green bar. There, aficionados can pop open something clean to drink and nibble on well-made plates by Fréderic Vilgicquel (already spotted at Etxe Nami), with backup from Hugo Carre (ex-Pigeons Blancs in Saint-Jean-de-Luz). Like the day we went for lunch: mussels in a beurre blanc sauce or butternut squash velouté with a soft-boiled egg; perfectly prepared line-caught hake in a warm salmorejo (Andalusian gazpacho), with steamed eggplant and zucchini, raw celery and purple basil, or chicken in a creamy vin jaune sauce, with polenta and sweet peppers. For dessert, opt for the chocolate mousse or the roasted figs with goat’s milk faisselle cheese and grape crumble. At night, they serve raciones : head cheese, Mexican-style tuna, octopus à la gallega … // Gérard Roubeix
