Auberge des Aryelets, Saint-Lary-Soulan: Michelin Bib Gourmand in the Pyrenees

A restaurant shaped by two lives and one valley

Since May 2018, the Auberge des Aryelets has been a welcoming stop in the tiny village of Aulon, high in the Vallée d’Aure. The couple behind it – Frédérique, originally from Réunion, and Julien, a local of the valley – met during their travels and chose to settle here. Their idea of hospitality is simple: a convivial, authentic meal that reflects the colours and flavours of the Pyrenees, all year round.

Instinctive cooking from the mountains

The menu follows the seasons and the producers. “La cuisine de nos vallées” is what they call it – modern but rooted in tradition, built from what the region offers. Porc Noir de Bigorre, Pyrenean lamb, trout from Lac d’Oô, local cheeses, black Astarac Bigorre poultry, and line-caught fish appear on their regularly changing carte.

The current 44 € menu (three courses) gives a clear sense of their style: boudin noir made with Bigorre pork, served with celery, apple and a celeriac-cardamom siphon; or a low-temperature veal vitello tonnato with red tuna and anchovy mayonnaise. For the main course, the trout is worked like morue, with leek fondue, root-vegetable mousseline and lobster bisque. The Pyrenean lamb is confit, paired with haddock and a reduced jus. Desserts lean toward classics with a twist – a millefeuille of caramelised hazelnuts, Réunion vanilla and salted-caramel, or a dark-chocolate tartelette with Espelette pepper and piquillo ice cream.

A Bib Gourmand nod

The Michelin guide awarded this mountain address a Bib Gourmand in 2026, recognising its combination of quality cooking and honest value – exactly what Frédérique and Julien set out to offer. The dining room is warm, the terrace opens in good weather, and the kitchen can adapt for vegetarian diets (vegan requests are politely declined).

Auberge des Aryelets is closed Monday and Tuesday outside school holidays. Booking is recommended, especially for the tasting menu at 66 €. Whether you come for lunch or dinner, you will taste the valley in every plate.
