The story
Perched in the hamlet of Sailhan, Erassens sits within the Les Hauts de Saint-Lary chalet complex, a stone-built restaurant that respects the traditional architecture of the Auroise valley. Inside, stone walls and wooden tables create an authentic, warm interior. The restaurant opens for lunch on weekends and for dinner from Wednesday to Sunday, with outdoor seating available when the mountain weather allows.
Chef Julien Saltet learned to cook watching his maternal grandparents, absorbing the importance of quality ingredients before training in traditional, gastronomic and Michelin-starred kitchens. At Erassens, he works with what the Pyrenees offer across the seasons – land, sea and mountain – sourcing raw produce from the local terroir. His goal is to reveal the depth of each ingredient while keeping every dish legible on the palate: from the finesse of fish to the tenderness of meats and house-made sorbets. The menu is a modern cuisine that respects tradition without being bound by it.
At his side, Julia Clavé manages the dining room with a warm welcome and attentive service. She guides guests through a wine list of some 200 references, selected to complement the chef’s cooking.
Erassens has earned a place in the Michelin guide as a Recommended restaurant, a recognition that aligns with the team’s dedication to precise, seasonal cooking. The restaurant is also part of a small hamlet offering chalet accommodation, making it a natural stop for hikers, cyclists and skiers seeking a memorable meal in the mountains.
