The story
Victor Betton’s path to the stove was not a straight line. A former competitive fencer, he discovered his passion for gastronomy after an injury. Training at Ferrandi in Paris, he sharpened his skills in some of the city’s finest kitchens – the Plaza Athénée and the Élysée Palace, where he cooked for state dinners. A year and a half in Tahiti, working as a private chef, deepened his respect for local ingredients. In 2022 he returned to the Emerald Coast, and in May 2024 he opened his own place in Saint-Malo intramuros, naming it after his great-grandfather.
Betton Fils calls itself a “bistrot éthique et convivial” – a living room where Escoffier’s methods meet innovation. The cooking is described as canaille: generous, simple, savoury, and authentic, always putting the finest local produce at the centre.
