A Rennes native who has worked in Dinard for over 25 years, Méril was the city's first Maître Restaurateur. His kitchen is a place of precise cooking and delicate harmonies, where every component—from bread and sorbets to fruit pastes and macarons—is made entirely in-house by his team. The result is a cuisine driven by spontaneous inspiration and a deep respect for Brittany's finest produce: wild turbot, "petit bateau" sole and Breton lobster feature prominently.
The menu changes with the season. A recent "Menu Plaisir" offered langoustine in gaspacho with wild asparagus, followed by Saint-Pierre fish or beef filet cooked low-temperature over wood fire.
