The story
On the narrow, cobbled streets of Saint-Malo’s Intra-Muros, Doma is a deliberately small space—so small that the owners insist reservations are made by phone. This intimacy is part of the appeal. The restaurant describes itself as serving "cuisine d'humeur et vins sympas"—food driven by mood, paired with approachable wines. That philosophy earned Doma a Bib Gourmand from Michelin, an award that recognises good quality, good value cooking. It is a badge that fits perfectly here: the cooking is precise but never precious, the prices refreshingly reasonable for the quality.
Doma’s menu is printed for the moment and subject to change, reflecting what is fresh and inspiring. Recent starters have included a lightly cooked veal with a Caesar-style sauce and relish, shredded skate wing with beurre monté and potatoes, and white asparagus with a perfect egg and broccoli. Main courses range from a chicken pastilla with yogurt sauce and creamy onions to line-caught pollock with vegetables, black rice, and a tom kha kai broth—a nod to Thai flavours. A vegetarian option of aubergine, fresh goat’s cheese, buckwheat, and a cold courgette soup shows the kitchen’s versatility.
Desserts stay true to the theme of modern, unfussy cooking: a financier cake with rhubarb and sweet-scented vanilla grass custard, or a strawberry tartlet with lemon and vanilla. A small cheese selection is also available. The entire menu is brief—three starters, three mains, two desserts—which signals a kitchen that cooks what it trusts, not what it stocks.
Doma is open Tuesday evening through Saturday, closed Sundays, Mondays, and Tuesday lunchtimes. Service runs 12:00–13:15 and 19:30–21:15. The restaurant will be closed from 8 to 16 June. With just a handful of tables, booking ahead is not just recommended—it is required.
