Chef Arnaud Beruel: A Breton at Heart

Young chef Arnaud Beruel, a native Breton and member of Maîtres Cuisiniers de France, leads the kitchen with a philosophy of sincerity. He lets the produce speak, sourcing fish and organic vegetables from local waters and a potager that borders the restaurant. His cooking is simple, generous, and inventive – traditional dishes like foie gras and veal sweetbreads treated with a light hand, and seafood given star turns with precise, delicate preparations. As Gala Gourmand notes, “Le chef ne parle pas beaucoup mais ses plats le font pour lui” – his dishes do the talking.

A Menu of the Sea and the Season

The menu at Le Bénétin reflects Beruel’s commitment to quality and seasonality. Starters might include Cancale oysters with Kampot pepper and ginger, or a creamy fondue of leeks with coconut broth, scallops, squid, and oysters. Main courses showcase the ocean’s bounty – line-caught bass carpaccio with tosazu, turbot plancha with Bellota ham and a low-temperature egg, or a roasted pigeon with potato millefeuille. A tasting menu at €95 lets the chef’s inspiration guide five courses. The bread is made with organic flour, and beef is French-sourced. Desserts are ordered at the start of the meal – from a Grand Marnier soufflé to a creative biscuit with mandarin, yuzu jelly, and Timut pepper.
