A Name Rooted in the Sea

Le Cambusier takes its name from a traditional shipboard role: the crew member responsible for distributing meals and drinks. It’s a fitting identity for a restaurant in the heart of Saint-Malo’s Intra-Muros, steps from the port. The nautical spirit runs deep – the sommelier, Marie-Eve, is the granddaughter of a true cambusier who sailed on the Terre-Neuvas fishing vessels in the 1950s.

Chef Olivier Hubert

After training in prestigious Relais & Châteaux establishments, chef Olivier Hubert cooked in London before returning to France to lead kitchens for the Concorde and Louvre Hotels groups, as well as Les Grandes Étapes Françaises. A Disciple d’Escoffier, he now anchors his cooking at Le Cambusier, where he revisits traditional French cuisine with a focus on fresh, seasonal ingredients sourced through short supply chains.

The Menu: Modern Cuisine with Breton Roots

The kitchen offers a modern cuisine that changes with the seasons. At lunch, the “Menu des Marins” provides a three-course option at an accessible price, featuring dishes such as rillettes of mackerel with capers and chives, merlan with Parmesan risotto and a Breton-curry langoustine cream, or beef cheek braised in cider with a mashed potato flecked with fleur de sel. The dessert list includes a chou pastry with strawberry Chantilly and a classic chocolate profiterole. The à la carte menu is available at both lunch and dinner.

Le Cambusier has been selected by both the Gault&Millau guide and the Michelin Guide, earning a place in the Michelin Recommended category for 2026 – a testament to the consistency and care in the kitchen. The dining room welcomes vegetarians and those requiring gluten-free options, and the restaurant is fully wheelchair accessible. With outdoor seating in good weather, a private room for groups, and a carefully curated wine cellar, it’s a place where the warmth of Breton hospitality meets the precision of modern French cooking.
