On Saint-Malo’s Boulevard de Rochebonne, Maison Vermer brings a fresh, confident approach to modern cuisine. Sophie and Quentin took over the address—formerly the well-regarded Coude à Coude—and kept the team and the DNA that made the place beloved: quality on the plate, attentive service, and a menu that changes with the seasons.
The kitchen puts the focus squarely on the sea and the land. Seafood and vegetables are the pillars here, treated with a refined touch that lets their natural character speak. The midday service is relaxed and accessible: a daily Menu du Jour with an entrée, main and dessert, or a four-step Déjeuner menu for those who want a deeper exploration. Come evening, the atmosphere shifts. The dinner experience is built around a discovery menu and a tasting menu—each one a showcase of the chef’s creativity, with the option to order à la carte if you prefer to steer your own meal.
Sunday lunch is something else entirely: a generous buffet called “Un dimanche comme à la maison,” served with the same warmth as a family gathering. It runs outside July and August, a weekly ritual for regulars and newcomers alike.
The recognition has followed naturally. Maison Vermer is now listed on the official Michelin guide—a quiet nod to the consistency and ambition of the cooking.
