From Chalut to Méson

Méson Chalut brings a fresh energy to Saint-Malo’s dining scene. Housed within the historic walls of the old city, the restaurant draws on the sea that surrounds it and the garden it cultivates, offering a seafood cuisine rooted in Breton tradition and openly modern. The address began as Le Chalut, a well-regarded gastronomic restaurant founded in 1987 by Sophie and Jean-Philippe Foucat. Today it is run by Natali and Vincent Prémorvan, who renamed it Méson Chalut—“méson” meaning house in Gallo, the local Breton language. They have infused the place with their own values: a deep respect for the environment, a commitment to local artisans, and a kitchen that celebrates the seasons.

The Sea and the Garden

Seafood is the heart of the menu, sourced exclusively from small-boat, sustainable fisheries. But the kitchen’s other essential partner is the restaurant’s own vegetable garden, which supplies herbs, edible flowers, fruits and vegetables throughout the year. This produce is complemented by ingredients from a network of local producers—farmers, oyster growers, dairy makers—each chosen for their craftsmanship and philosophy. The cooking is described as “une cuisine vivante des produits de la mer, des tempêtes et des embruns, des merveilles de nos jardins,” a lively cuisine of sea, storm, spray, and garden wonders.

A Setting That Tells a Story

The dining room reflects the same care. Custom wallpaper evokes Breton landscapes, ropes are worked by a master rigger, and glass buoys are blown by a local artisan. Natali Prémorvan’s own linocut illustrations add a personal, handcrafted touch. The atmosphere is convivial and unhurried, with the sounds of the nearby harbour drifting in. Every detail, from the tableware to the decor, reinforces the restaurant’s attachment to its territory.

Recognition for Responsible Gastronomy

Méson Chalut has been awarded the Green Food Ambassador label for its sustainable practices, and is listed in both Gault & Millau and the Michelin guide, which currently recommends it. These honours reflect not just the quality of the cooking but the integrity of the entire project—a restaurant that is as attentive to the health of the planet as it is to the pleasure of the plate. In a city known for its maritime heritage, Méson Chalut stands out for its clear-eyed, modern take on Breton seafood.
