Behind the somewhat pompous name lies a joyful restaurant run by a dozen or so individuals with disabilities in the kitchen, supported by very attentive front-of-house staff in a bright space with big windows. Beyond the humanistic value of this spot, where kindness reigns, chef François Vilbert (ex-La Mare aux Oiseaux and Pickles in Nantes) sends out seriously tasty bistro cooking that’s simple and to the point. For us the other day at lunch, that meant: a lovely smoked duck breast and a crisp haricot vert salad with the very first plums of the season; a tasty hake and spinach pressé doused in a generous amount of somewhat runny beurre blanc sauce, served with bok choy; before a hearty coconut rice pudding with a thick mango coulis and a sprinkling of homemade granola. // Meriadec Chouchen
