Chef Pavel Hug, who reached the semifinals of Top Chef season fifteen, treats the Provençal landscape as a direct ingredient source. His plates balance technical precision with instinct, drawing directly from local harvests rather than chasing trends. This grounded modern bistro approach earned the venue a spot on the 2026 Le Fooding list, recognizing a kitchen that prioritizes genuine flavor over spectacle.

Inside the secret garden

The dining area opens into a shaded courtyard tucked behind the historic Hôtel de Sade. Old stone walls frame long wooden tables illuminated by low string lights, creating a quiet refuge steps from the town square. Guests gather here between seven and eleven during summer evenings, drawn by the steady pace and the structured hospitality model built by the Recevoir collective. The layout preserves an airy openness suited to warm Mediterranean nights.

Mediterranean libations

Mixologist Clément Brousset designs every cocktail to mirror the same regional focus found on the plate. A former bar lead at five-star properties including Capu Biancu and the Syndicat Cocktail Club, he sources strictly from Provençal growers and distillers. His menus weave botanical pairings with familiar base spirits, ensuring each drink remains readable while offering clear aromatic layers. These creations complete the service without overshadowing the food.

A midsummer night’s dream (the mercury hit 38°C that evening!), somewhat refreshed by the invigorating compositions by Pauline Séné, a former contestant on France’s “Top Chef” 2021 and ex-chef at Fripon in Paris, who’s in residence at the Hôtel de Sade throughout the summer, bringing joy to its huge terrace criss-crossed with string lights. Surrounded by old stone walls – some dating from the 4th century, we tucked into: a delicate melon and green curry gazpacho concealing chunks of grilled watermelon, all drizzled in green oil; sea bream carpaccio all cozy in cherry tomato water, with cucumber rounds, pickled cherry and dill oil; hanger steak tataki with a punchy BBQ sauce with figs and black garlic, flanked by an impeccable potato pressé (grilled on the outside, tender on the inside) and fig wedges; before a hearty roasted apricot with honey and rosemary, accompanied by a mini-financier and an airy cardamom crème diplomate. Watch out, as things certainly heat up in the height of summer, especially since the terrace seats 120 covers! // Gwen Jacques
