The story
Restaurant Colette takes its name from the French novelist Sidonie-Gabrielle Colette, who fell in love with Saint-Tropez in the 1920s. She hosted artists and writers at her nearby house, La Treille Muscate, serving simple dishes from the kitchen garden. That same spirit of hospitality and respect for produce now lives on at the restaurant of the 5-star Hôtel Sezz, facing the Baie des Canebiers.
Since reopening the restaurant in summer 2020, Chef Philippe Colinet – a Maître Restaurateur – has earned a Michelin star, which he has held every year since 2021. His cooking is described as pure, natural, and vegetable-driven, with the ingredient at the centre. He works closely with local market gardeners, fishermen, and livestock farmers to source the best of Provence and the Mediterranean. Sea fennel foraged from the beach beside the hotel, wild herbs, and seasonal vegetables all feature prominently. The hotel now maintains its own herb garden.
The restaurant is open for dinner only, with a terrace shaded by olive and palm trees overlooking the pool. The interior design is clean and contemporary, with a focus on natural light. The cuisine is a celebration of Mediterranean flavours: subtle, refined, and deeply respectful of the product. Guests can also book the Chef’s Table, a custom piece by designer Christophe Pillet made of brushed solid oak, placed directly in front of the kitchen pass. There, they can watch Chef Colinet and his team at work, chat with him about his sourcing, and experience the signature “Lemon Experience” – a multi-sensory tasting moment.
Colette’s Michelin star reflects the consistency and quality of the cooking. The restaurant’s tagline – “a journey in the Mediterranean” – captures the essence of the menu, which changes with the seasons. The atmosphere is both festive and intimate, with live music once a week. Whether dining indoors or on the terrace, the experience is one of understated elegance, rooted in the flavours of the region.
