A name rooted in history

Skáli takes its name from the Old Norse word for “the common room” – the Viking chieftain’s hall where feasts and gatherings were held. It’s a fitting name for a restaurant that celebrates the pleasures of the table in the heart of the Norman countryside. Set in the village of Saint-Wandrille-Rançon, just outside Rives-en-Seine, the restaurant sits in a former church square, surrounded by the lush landscape of Haute-Normandie.

Chef Julien Durand leads the kitchen with a philosophy of honest, contemporary cooking. The cuisine is modern, but grounded in the produce of the region: trout from the nearby Saint-Wandrille stream, duck from local farms, and vegetables from the surrounding market gardens. The menu changes with the seasons, offering tasting menus that start at €48 for three courses and go up to a seven-course blind tasting at €85. Dishes such as artichoke with hazelnut and oregano, Saint-Wandrille trout with rhubarb and almonds, or duck fillet with beetroot, cherries and elderberry show a clear, precise hand.

A space to linger

The dining room is designed to feel like an extension of the landscape. Wood, natural light, and greenery create a seamless indoor-outdoor atmosphere. A large main room opens onto the view, while a more intimate bar-lounge and a terrace for warmer months offer different moods. The tableware is handmade ceramic, the linen is woven in Normandy – every detail reinforces the local focus.

The wine list is curated by Timothée Ludot, whose experience in Beaujolais vineyards informs a selection of well-chosen, often organic bottles. Desserts are equally thoughtful: a thin tart with dark chocolate and cocoa nibs, or a riff on local beer with hops and caramel.

Recognition for thoughtful cooking

Skáli’s approach has earned it a Michelin Recommended distinction in the 2026 guide, alongside a Toque Table Gourmande from Gault & Millau. The restaurant is also a member of the Collège Culinaire de France and committed to the sustainable development goals of the Regional Natural Parks. This is modern cuisine that respects its roots – and makes you feel at home.
