The restaurant is the project of Manuela and Thomas L'Hérisson, both seasoned professionals who trained in some of France's most respected kitchens – Château Cordeillan-Bages, Le Bristol, Le Grand Véfour. In March 2010, they discovered this calm property and turned it into their own. Their cooking is contemporary and refined, rooted in local produce and a clear respect for the seasons. The kitchen expresses itself through modern cuisine that feels both creative and honest, without unnecessary flourishes.
L'Auberge Saint Jean has held a Michelin star for years, a recognition the team wears with pride. As they put it, the star “celebrates our passion, our rigour, and our commitment.” That commitment shows in every detail – from the thoughtful wine list to the careful service. The restaurant is open Thursday through Saturday for lunch and dinner, and Sunday for lunch. Wednesday is reserved for kitchen preparation, ensuring the quality that the star demands.
