The story
In the Alpine village of Combloux, just outside Sallanches, Signature occupies a restored farmhouse on the Chemin de la Promenade. Step through the door and past a corridor lined with antique objects, and you find a small, warm dining room. It is an intimate setting for the cooking of Florent Meyer, a chef whose work has earned the restaurant a Michelin Recommended distinction.
Meyer describes his cuisine as “rural modern” – a phrase that captures both the rootedness and the precision of his cooking. The menu changes with the seasons and the local produce available, driven by the chef’s mood and inspiration. Everything is made in-house, from the bread to the final jus.
The plates, as photographed on the restaurant’s site, give a clear sense of the kitchen’s style: omble chevalier, carrot, condiments grenobloise – a lake fish prepared with a classic Alpine sauce; mignon de porc fermier, pomme boulangère, wild asparagus and a rich jus; and pomme de ris de veau, cauliflower, parsley and stuffed mushrooms. These are dishes built on technique and local ingredients, presented without fuss.
The wine list is extensive and leans heavily on Savoyard vineyards, offering a chance to explore the region’s lesser-known bottles alongside a broader selection. The room itself is unfussy and welcoming, with stone walls and a low ceiling that make the space feel like a private house.
Signature is open seasonally, closing for part of the year before reopening in early June. It is a place for a quiet, considered meal – a true expression of one chef’s vision in a corner of the French Alps.
