The story
In the village of Salles-la-Source, just steps from the waterfall that gives the restaurant its name, Cascade offers a modern cuisine deeply rooted in the Aveyron terroir. The establishment earned a Michelin recommendation in 2026, a recognition of the inventive, seasonal cooking led by a young, passionate team.
Since 2022, Léna Bony and Mathieu Libourel have been at the helm. Both grew up in the region—Léna in a family of restaurateurs (her parents run the century-old Auberge de la Cascade), Mathieu on a farm in Millau. They met at the Saint-Chély-d’Apcher hospitality school, then refined their craft in Geneva and at the Château de Labro before returning to open Cascade. With them is chef Marine Guichou, recruited straight from the same school, and a team of seven collaborators.
The restaurant occupies a historic building with two distinct areas: the main dining room and Toît Canaille, a dedicated space for private events, seminars, and receptions. Outdoor seating is available, and the venue is wheelchair accessible.
The kitchen works by three principles: inventive cooking, seasonality, and savoir-faire. The menu changes with the seasons, showcasing local products. The chefs describe their approach as “cuisine du terroir revisitée”—a modern interpretation of traditional Aveyron dishes. This is modern cuisine at its most grounded: creative yet respectful of the land.
For Bony and Libourel, a restaurant exists to bring people together. “A restaurant gathers people for what they have best: the sense of sharing,” they say. That philosophy is felt in every detail, from the welcome to the plate.
Cascade sits on the Route Soulages, between Rodez and Conques—a natural stop for those exploring the Aveyron countryside. Whether for a lunch on the terrace or a private event in the Toît Canaille, the experience is one of genuine warmth and refined, locally rooted gastronomy.
