Perched on a hillside in Puylausic, La Maison Despouès commands a 360° panorama of the Gers valleys and the Pyrenees chain. The building itself was once the home of singer Pierre Vassiliu, now transformed into a refined, cosy restaurant. The setting alone invites you to slow down.
At the stove is chef Julien Razemon, who leads his brigade with precision and calm. His training took him through three-Michelin-starred kitchens, where he acquired the rigour that now defines his cooking. He refreshes the menu every two weeks and the carte every month, following the rhythm of the seasons. The cuisine is modern, grounded in local produce and the chef’s constant search for the best regional suppliers.
The chef is supported by a dedicated team: Yanick, Morgan, Axel, Baptiste, Tom, and Noa in the kitchen, while Guillaume, Jérôme, Orane, and Léa tend the dining room. Nathanaël suggests thoughtful wine pairings. Cynthia, the heart of the house, ensures every detail is right. Every plate reflects this collective love for taste and detail.
