In the village of Sare, one of the most beautiful in the French Basque Country, the Fagoaga family has transformed a 16th-century labourdine farmhouse into a destination that blurs the line between restaurant and guesthouse. Olhabidea is a place where the past is palpable, from the thick stone walls and the lorio (covered porch) to the mezzanine gallery that overlooks the central hall. The atmosphere is intimate and serene, a feeling reinforced by the carefully composed interiors—a mix of antiques, family heirlooms, and fresh flowers—and the garden planted by the brothers' grandfather, where camellias, maples, and conifers frame the view.

This is the home of Chef Guillaume Fagoaga, who, alongside his brother Jean (who minds the dining room with quiet attentiveness), took over the family's bed-and-breakfast in 2005 and added a gastronomic restaurant. Guillaume’s cooking is described as intuitive and alive. He follows the rhythm of the market and the seasons, drawing inspiration from the organic kitchen garden and orchard he tends on the property. The result is a cuisine that feels both deeply personal and rooted in the landscape of the Basque Country. The dining room itself is elegant but not stiff. Bouquets of flowers brighten the tables, and the service is warm and informed. Jean takes pleasure in explaining his brother’s dishes and sharing the stories of the house. The menus change regularly, but the philosophy remains constant: fresh, seasonal ingredients handled with respect and a lack of pretension.
