The story
In the west of Corsica, between the Tizzano valley and the Mediterranean Sea, Santu Pultru is a guest ranch that doubles as a destination for thoughtful dining. The restaurant sits at the heart of the property, a place where the kitchen takes its cues from the land: seasonal produce from short supply chains, local Corsican ingredients, and the ranch’s own meat.
The menu moves from fresh salads and cold cuts to more elaborate semi-gastronomic dishes, all prepared by the chef. The setting is rustic and authentic, with stone and wood interiors and a fireplace for winter meals. It is a table that feels both of the farm and refined in its execution.
Santu Pultru’s cooking has earned a Michelin Recommended distinction for 2026, a nod to the quality of its farm-to-table approach. The restaurant is open for lunch and dinner, with a set lunch menu available. Outdoor seating lets guests dine overlooking the prairie where the ranch’s horses graze.
Beyond the plate, Santu Pultru offers a full equestrian experience: horse rides, multi-day treks through the maquis, and stays in rustic chalets or a traditional Corsican bergerie. The restaurant can also be privatised for events, from weddings to seminars.
The ranch is currently closed but will reopen soon. When it does, the table at Santu Pultru will once again offer a genuine taste of southern Corsica, in a place where the kitchen and the landscape are inseparable.
