L'Alchimiste brings a fresh approach to dining in Saumur, close to the city centre. The restaurant works with fresh, seasonal produce, crafting dishes that balance tradition with a modern, creative spirit. The setting is contemporary, a clean backdrop for food that is refined and of the moment. This approach earned it a place in the Michelin guide, a recognition that speaks to the care and precision behind every plate.
The menu changes with the seasons, but signature dishes give a clear sense of the kitchen’s style. A “pot de fleur d’anguilles aux citrons confits” – eel presented like a flower pot with candied lemons – shows both playfulness and technical skill. The filet de sandre (pike-perch) is a regular feature, and desserts like pommes tappées (a classic apple preparation from the region) offer a sweet finish rooted in local tradition. The kitchen is led by François Deplagne, who also shares his craft through cooking classes filmed at the restaurant.
L'Alchimiste offers several menu formats. The lunch formula at €31 includes entrée-plat or plat-dessert. A full menu at €35 gives three courses, and the “Menu l’Expérience” at €46 is the chef’s curated journey through the season’s best. The restaurant is open for lunch and dinner, with outdoor seating available. Closed Sunday and Monday.
