The menu is built around a single, excellent cut: 200 grams of rumsteak from the local "Rouge des Prés" breed, served with a special beurre noisette and a mustard made from pleurotes mushrooms grown in the caves of the Saumurois. Alongside the beef, there is always a wild line-caught fish from the Lorient auction in southern Brittany, prepared simply as a carpaccio with white radish and nuts.
