The story
Au Bon Jaja in Sauve prepares Provençal cuisine using only products gathered from nearby markets each morning. Léo Zamponi handles the procurement while Emily Schons builds the plates. They keep preparations simple so the quality of each vegetable remains visible. The restaurant earned a spot on the Le Fooding list by refusing to overcomplicate these regional dishes.
Meals usually begin with a carefully arranged charcuterie selection before shifting to heartier options. A thick brandade de morue gets finished with bergamot oil and crisp greens from Oustalet. Sautéed veal arrives tender alongside smooth polenta and sweet citrus tomatoes. Guests also order the ja jardinière, which layers roasted beets, chickpeas, quinoa tabbouleh, and a soft-boiled egg with spiced carrots.
Dining happens primarily outside on Place du Docteur Jean Astruc, a quiet square lined with mature plane trees. Glass lanterns and stacked wine barrels create a relaxed backdrop for slow meals. Naturalist wines flow freely from the cellar while families settle into the spacious seating area. Desserts close the service with either a white chocolate and raspberry cheesecake or a rich chocolate pudding crowned by a tall almond tuile.
