The story

Chais Vivants Restaurant in Seurre | Vegetarian Market Cuisine

The Chefs and Their Vision

Chais Vivants in Seurre delivers a grounded approach to vegetarian market cuisine through the hands of Jeremy Riou and Camille Carton. Recognized in the 2026 Le Fooding guide, the kitchen converts a former highway stop into a destination worth pulling over for. Camille brings professional training from Anne-Sophie Pic and the Michalak bakery, while Jérémy arrives from Le Quinzième and Maison Verot. They source seasonal produce straight from regional farmers to support their plant-forward cooking.

A Menu Rooted in the Landscape

Midday plates draw direct inspiration from the surrounding woods and waterways. A sharp venison terrine pairs with pickled radishes and robust sourdough baked by Le Fournil des Diablotins. Diners frequently order the flash-seared matured catfish marinated in umamiso, served alongside carrot purée, Brussels sprouts, and buttery glazed turnips. Sweet finishes feature bright combinations of clementine jelly, crisp meringue sticks, and fresh grapefruit segments.

Exposed Stone and Open Terraces

Recently updated interiors showcase raw exposed stone and untreated timber beams beneath high ceilings. Large windows frame uninterrupted views of the passing road, the nearby river, and dense forest. Guests preferring outdoor dining settle under wooden pergolas strung with warm lighting. An attached garden provides a secure play area for families while parents enjoy their meals. The team also organizes themed evenings that introduce visitors directly to the local producers and winemakers behind the menu.

Ease off the pedal, make an emergency stop! Inside this old roadside inn, thirty-somethings Camille Carton (trained under Anne-Sophie Pic and at Michalak bakery) and Jérémy Riou (ex-Le Quinzième with Cyril Lignac, Maison Verot) have turned the highway lunch stop into something genuinely worth pulling over for! Dishes burst from the kitchen into a bright, simple, recently renovated dining room (exposed stone, untreated wood), with views of the surrounding countryside and passing traffic. To the left, a river; to the right, forest – both inspiring the midday menu: punchy venison terrine with pickled radishes and excellent sourdough bread from Le Fournil des Diablotins; an unbelievable fillet of matured catfish from Jean-Thomas Vuillard, flash-seared with an umamiso marinade and paired with carrot purée, Brussels sprouts and buttery glazed turnips; before a sweet one for the road, a citrussy-fresh dessert combining clementine jelly, meringue sticks, grapefruit segments and peaks of whipped cream. Tank’s full for the next leg of your journey! · Pascal Diagonale
