The story
At the foot of the Basque mountains, in the listed village of Ainhoa near Souraïde, Argi Eder (“beautiful light” in Basque) offers a genuinely warm welcome. This family-run hotel-restaurant, now in the hands of Bruno and Philippe Dottax, carries forward a reputation built by their father. The setting is a green haven with century-old oaks, and the atmosphere is convivial—a place where guests feel at home.
The kitchen here is rooted in the Basque culinary tradition, but with a precise, modern touch. The restaurant has earned a place in the Michelin guide, a recognition that speaks to the consistent quality of the cooking and the strength of the local ingredients.
The menu changes with the seasons, but the summer 2026 carte shows a clear respect for the land and sea of the Pays Basque. Starters might include white asparagus with a creamy Ossau-Iraty cheese velouté and a soft-crusted egg, or lightly confit Banka trout with garden peas, bacon, and a Jurançon wine jus.
Among the main courses, line-caught hake arrives with lemon fregola and langoustine bisque. Local Axuria veal is sautéed and served pink, with a Jurançon onion and leek compote and an axoa-style jus. Pigeon from Maison Garat is offered two ways: pan-fried fillet and a confit leg, all with a salmis jus and mushroom duxelles.
Desserts maintain the same clean, thoughtful style. Look for a passion fruit and mango creation with vanilla cream and coconut meringue, or a Valrhona chocolate trio matched with a surprising raspberry-piquillo sorbet.
Three tasting menus are available: the Argi Eder Menu at €49 (starter, main, dessert), the Gourmand Menu at €67 (appetizer and four courses), and the Dégustation Menu at €87 (appetizer and six courses). A cheese trolley features selections from the Basque Country and Béarn.
