The story
In the Cronenbourg district of Strasbourg, Colbert is a modern bistro where generosity meets creativity. Chef Romain Creutzmeyer and his wife Stéphanie run this chic yet unpretentious address, a place that carries personal history: the name honours Romain’s grandfather, while also recalling the French navy ship on which Stéphanie’s grandfather served. A happy coincidence for a duo who share the same love of gastronomy.
The cooking here is modern cuisine rooted in the great French classics, revisited with a light hand. Every product is sourced with care, prepared and cooked to be elevated. The menu changes with the seasons and the market, favouring heart and flavour. Among the starters, the house foie gras comes with a seasonal fruit chutney and homemade fruit bread. The Vol au Vent Colbert is a signature main, while the braised lamb shoulder with artichokes, asparagus and a reduced jus with Taggiasca olives shows the kitchen’s confidence with slow cooking. Desserts include a classic floating island and a chocolate fondant with vanilla emulsion.
The wine list offers a carefully selected range of nectars from local and further-flung vineyards. When the weather allows, the charming terrace is a welcome spot for a meal outdoors.
Colbert has earned a place in the Michelin guide, a recognition that reflects the consistency and sincerity of the cooking. The restaurant is closed Sunday and Monday all day, and Tuesday evening. Private parking is available.
