The story
Just minutes from Strasbourg, in the village of La Wantzenau, Le Relais de la Poste is a three-star hotel and restaurant housed in an authentic Alsatian building. The gourmet restaurant earned its first Michelin star in March 2023 under Chef Thomas Koebel, who took the helm in July 2019 with a clear mission: to restore the establishment to its former glory.
A passionate gastronome, Koebel trained in Alsatian kitchens including L’Auberge du Cheval Blanc, Au Cygne, and Au Crocodile before taking charge at Le Relais de la Poste. His cooking is defined by precision, clear presentation, and an insistence on fresh, seasonal, and local produce. His signature dish, a Croustillant de pigeon au foie gras, wraps pigeon breast and foie gras in a green cabbage leaf and brick pastry—a dish he keeps regularly on the menu. The menu itself evolves every five to seven weeks, following the rhythm of nature and the availability of key seasonal ingredients.
In the kitchen, Koebel works closely with second chef Léa Merkel, a veteran of Le Crocodile, while in the dining room, room manager Étienne Eyer guides guests through a wine list of 700 references, pairing world-class bottles with the chef’s creations.
The restaurant offers a set four-course menu and a five-course surprise menu, as well as a market lunch from Wednesday through Friday. The atmosphere is one of quiet refinement, where the team’s professionalism ensures each service is of the highest quality.
