The story
In Strasbourg, near the Parc de l’Orangerie and the banks of the Ill, Les Funambules delivers a dining experience that lives up to its name – a high-wire act of flavour and finesse. Chef Guillaume Besson, now at the helm, invites guests to discover a cuisine that balances modern technique with quality local produce, all while keeping one eye on the stars. The restaurant earned its first Michelin star in 2019, a recognition that followed its founding by three passionate “funambules” (tightrope walkers).
The cooking here is inspired by the chef’s travels, weaving Asian influences into a menu that changes with the seasons. Ingredients are organic, local, and 100% homemade. The midday “sur le fil” menu lets diners surrender to a four- or six-stage journey guided by the kitchen’s daily inspirations, while the evening degustation offers a deeper exploration of Besson’s creative range. Dishes might pair Alsatian poultry with foie gras and verbena consommé, or feature line-caught fish with charred new carrots, pistachios, and a turmeric-curry beurre blanc.
The dining room is contemporary and warm, adorned with black-and-white photographs of tightrope walkers and anchored by a striking glass table on a teak-root pedestal. The wine list, curated by Camille Cullard – a veteran of Auberge de l’Ill and L’Alchémille – focuses on biodynamic and natural wines, with pairings designed to complement the chef’s “gourmet score.” Les Funambules is a place where precision and spontaneity meet, and where every meal feels like a carefully balanced walk between tradition and invention.
