The story
Auberge Baechel-Brunn opened in 1978, the creation of Simone and Jean-Paul. In 2011, Esther and Thomas Limmacher took over and set out to reinvent the restaurant without losing its essence. They redesigned the dining room into a sleek, contemporary space while preserving the warm, generous spirit that had made the address beloved. Their credo: “A cuisine of yesterday with today’s taste.”
Chef Thomas Limmacher’s cooking is firmly rooted in the Alsatian terroir. He selects seasonal local products with great care, then treats them with delicacy and imagination. His style is innovative and generous, boldly playing with textures and presentation, always seeking to sublimate ingredients with transparency and creativity. The result is a contemporary culinary experience that retains true Alsatian generosity—modern cuisine that honours tradition while embracing the new. The Michelin inspectors recognised this balance, awarding the restaurant a Recommended distinction in 2026.
