A Duo Driven by Season and Sincerity

At Le Pastel, chef Bruno Chastagnac and his partner Pascale Lorain have built a restaurant that prizes rhythm over routine. "Our cuisine is dictated by the seasons," they write – a cycle that inspires every plate. Bruno, an autodidact, draws on the Mediterranean larder of Toulon’s morning market, selecting fish from the criée, vegetables from Provençal growers, and herbs from sun-baked fields. Pascale orchestrates the dining room with warmth and precision, curating a wine list of organic and biodynamic bottles that mirror the kitchen’s values.

A Kitchen That Paints with Produce

Bruno’s cooking is both precise and open: he may pair a local oyster with Asian accents or finish a dish with Japanese miso, yet always lets the ingredient speak. The menu changes quarterly, with offerings like asparagus and black garlic aioli in spring, or a pigeon suprême with hay-smoked jus in autumn. Even the bread is made daily by hand. An Intimate Setting Near the Port

Just steps from Toulon’s port, the dining room is a refined yet unpretentious space: white tablecloths, fresh flowers, soft lighting, and a calm that feels like a private home. The “Actes” – One Product, One Menu

Once a month, the regular carte disappears for a weekend. Bruno chooses a single ingredient – say, crab, as in Acte 5 – and builds a complete menu around it: a creamy starter, a tartare with verbena, a stuffed courgette flower, a mousseline, and a dessert. It’s a bold, intimate way to experience the depth of a product, and it sums up the restaurant’s philosophy: simplicity, creativity, and a deep respect for what the market offers.
