The story

Santa Rosalia Toulon: Organic Mexican-Inspired Dining on Rue Charles Poncy

Roots in Baja and Provence

Santa Rosalia presents Mexican cuisine in Toulon, opening its doors in 2015 after founder Rogelio brought his vision from an auto-sufficient ranch in Baja California to the Mediterranean coast. The kitchen bridges coastal traditions with local agriculture, building every plate around ingredients sourced directly from regional growers. This approach keeps the menu strictly seasonal while maintaining a clear commitment to plant-forward preparation. Nearly all produce arrives from certified organic farms within Provence, ensuring that each dish reflects the immediate landscape rather than distant imports.

A Seasonal Plate

Daily menus shift according to harvest availability, turning simple ingredients into layered flavors through careful technique. Guests often order toasted corn tostadas topped with fresh goat cheese from Puget-Ville, crisp cucumber, and a house-made flame-charred chili sauce. Hearty tacos feature vegetables caramelized over charcoal, while dessert plates might showcase frozen fennel paired with candied pumpkin seeds or roasted apricots resting in a vanilla cream. Every recipe evolves alongside the producers who supply the kitchen.

Space and Recognition

Situated on a quiet residential street, the dining room balances raw industrial touches with a large shared wooden table designed for casual conversation. A shaded terrace extends the seating area during warmer months, allowing natural light to wash over the simple décor. This unpretentious setting has earned consistent attention from culinary critics, including a steady presence in Le Fooding since the restaurant first opened. The recognition highlights how straightforward execution and strict ingredient standards can resonate far beyond Toulon.

On a narrow street in the center of Toulon, two small cast-iron tables can be found just outside the entrance to Emmanuel Davilma and Henri Kaced’s taqueria . Inside this space with unfinished walls and a communal table, dig shamelessly into their radically local, organic, plant-based menu. Just take the other day at lunch as proof: a tostada topped with fresh goat cheese from Puget-Ville, crisp cucumbers, cilantro and pickled black radish, served with a homemade flame-charred chili sauce – which also comes in a vegan-friendly version, with a chickpea cream instead of goat cheese; delicious tacos with carrots caramelized over the BBQ and a vegetable cream, or corn-flake-breaded zucchini; before another tostada – a sweet one this time around – combining corn-vanilla cream and roasted apricots. // Mathilde Moche
