The name says it all: agapes – a copious, joyful meal shared among friends. At their restaurant in Toulouse’s Saint-Aubin quarter, chefs Virginie and Arnaud have created exactly that: a place where modern French cuisine meets genuine conviviality.

Both chefs bring years of experience from prestigious gastronomic establishments. Opening their own restaurant was the natural next step – a dream realised in a small, elegant space that feels both polished and welcoming. The dining room is clean-lined and intimate, designed so every detail matters without ever feeling stiff.

The cooking is firmly rooted in the seasons. Virginie and Arnaud work with fresh produce sourced as much as possible from local growers, letting simplicity and finesse take centre stage. Dishes change with the market, balancing gourmandise with restraint. The result is a modern cuisine that feels honest and deeply flavourful.

Their approach has not gone unnoticed. Agapes earned a Michelin Recommendation and was named Jeune Talent Occitanie by Gault&Millau in 2024 – recognition that speaks to the precision and heart in every plate.

There’s a new addition to the Saint-Aubin neighborhood! Bistrot des Sales Gosses has given way to Agapes, run by Toulouse native Arnaud Darbas and Virigine Béziaud from the Vendée department, both of whom have impressive credentials to their names (La Chèvre d’Or in Eze, La Vague d’Or in Saint-Tropez). Served à la carte the day we went, there was an exhilarating meagre crudo marinated with citrus fruits and ginger, cozied up against a spelt wheat salad dressed in ponzu sauce and dotted with satsuma mandarin quarters, pomegranate seeds, diced daikon radish and fried freekeh; excellent veal rump from La Table de Solange in the Aveyron, seared until medium-rare and then drizzled in the meat’s juices, and paired with pan-fried wild mushrooms (porcini, sweet tooth mushrooms, cauliflower fungus) and a baked ziti casserole made with more of the same mushrooms; before a mouthwatering Guyot pear dessert prepared like a tarte Bourdaloue, with cream, poached pear and pear sorbet, all sprinkled with dried pear skin powder. // Gérard Roubeix
