The story
Since 1992, Au Pois Gourmand has anchored itself on the banks of the Garonne in Toulouse. The restaurant’s identity draws from nature, red brick, Corten steel, and wood. A panoramic terrace and a balcony overlook the river, while three refined lounges provide an elegant backdrop for a meal. The restaurant is recognised by the Michelin Guide (Recommended, 2026), a nod to its consistent quality and welcoming atmosphere.
Chef Ugo leads the brigade, offering what the team calls “gastronomie décomplexée” — unpretentious, confident cooking. The service is warm and convivial, matching the spirit of the food. The cuisine is modern, rooted in seasonal market produce and precise technique.
Menus change with the season and the chef’s market finds. At lunch, the Menu Marché (35€) offers a choice of starters like confit egg with smoked haddock cream, pear pickles, and paprika crumble, or duck foie gras cooked in salt with apricot compote. Mains might include fillet of maigre with summer vegetables and a lobster bisque siphon. Desserts range from roasted brioche with poached peaches to a cooked chocolate and tonka bean ganache.
The Menu Découverte (59€) expands the experience: a cold pea soup with cumin, confit egg, royal sea bream, deboned and stuffed quail, and a hibiscus mousse with black cherry gel. A fully vegan Menu Végétal (59€) showcases beetroot chawanmushi, textures of shiitake and girolles, and a basil risotto with courgette and pistachio. For deeper indulgence, the Menu Dégustation (85€) includes lobster liégeois, pan-seared scallops, venison fillet from the Pyrenees, and a local cheese trolley. The Menu Homard (95€) is a lobster-focused journey from ceviche to medallion.
Wine pairings are offered for each menu, including non-alcoholic options. Au Pois Gourmand also caters for private events and offers gift boxes.
