The story

Basta Pizza in Toulouse: Brothers Peronne and the 72-Hour Dough Ritual

The Founders and Their Dough

Basta delivers authentic Neapolitan pizza to Toulouse through the meticulous work of brothers Romain and Clément Peronne. Born in Perpignan, the pair treat dough preparation as a strict ritual rather than a quick assembly line task. Every base requires a full seventy-two hour maturation period before it reaches the oven. This commitment to slow fermentation earned them a spot on the 2026 Le Fooding guide.

Signature Creations

Every pizza crafted here avoids shortcuts in favor of deliberate flavor combinations. A classic Margherita relies on bright San Marzano tomato sauce to balance the fresh mozzarella layer. The pesto variation introduces stracciatella cream alongside toasted pine nuts and sun-dried tomatoes. Sweet elements appear deliberately, such as the Formaggi slice which combines four Italian cheeses with apricot jam.

The Dining Space

Visitors encounter a compact room decorated with heavy blue typography that echoes the playful nature of their baking process. Large glass doors open onto a street-facing terrace that captures the evening rhythm of the Saint-Cyprien district. A curated soundtrack plays at a volume designed to encourage conversation without overwhelming the meal. Guests tracking the wood-fired oven through the kitchen window witness the final stage of this pizza transformation.

Resolutely set on feeding the Saint-Cyprien neighborhood the right way, Romain and Clément Peronne don’t cut corners when it comes to pizza: flour straight from Lombardy, dough given a full 72-hour maturation (non-negotiable), 100% Italian ingredients – and basta ! In their gluten-fueled lair, stamped with bold blue lettering and buoyed with an atmosphere as light and pillowy as their dough, the Perpignan-born brothers turn out Neapolitan classics with quiet swagger: like the Margherita with a bright, tangy San Marzano tomato sauce, or the Pesto combining stracciatella, creamy pesto, toasted pine nuts and sun-dried tomatoes. They’re not above a clever plot twist, either: the Formaggi pairs apricot jam with a quartet of Italian cheeses (ricotta, mozzarella, parmesan, gorgonzola) and a scatter of slivered almonds, while the Toulouse-style Salsiccia brings things closer to home with local sausage and caramelized onions. Bonus points for the playlist that nudges you to linger… and immediately plot your return! · Marie Delcampo
