The story
At En Pleine Nature, just east of Toulouse, chef Sylvain Joffre brings a deeply personal philosophy to the table. “Nature is essential to me,” he writes. “It is the root from which I draw my inspiration, the trunk that reassures me, and the bud of creation.” His cooking, recognised with a Michelin star, is built on freedom, simplicity, and a committed approach to ingredients.
Joffre describes himself as a cook, a gardener, and a forager. For years he has gathered wild herbs, flowers, fruits, and mushrooms, and more recently he has begun cultivating rare plants and vegetables. This direct connection to the earth drives every dish. The menu changes with the seasons, adapting to what the land offers rather than imposing a fixed idea. The result is a style of modern cuisine that feels both spontaneous and precise.
The restaurant offers several tasting journeys. The “Jardin et Cueillettes” menu – five courses centred on vegetables (though not vegetarian) – showcases Joffre’s foraged and garden-grown produce. The “Territoire d’Ici” menu explores the flavours of the local region. Both can be paired with wines or non-alcoholic beverages carefully selected to complement the meal. A lunch formula and a children’s menu are also available.
The space is described as pared-back and airy, a setting that lets the food speak. Joffre’s commitment to local producers is evident: he limits imported ingredients and works to highlight the work of farmers and artisans around Toulouse. The restaurant also houses a bakery and a wine shop, but the dining room itself remains focused on the experience of eating well, in season, and with purpose.
