Fogo in Toulouse operates as a dedicated bistro where open flame dictates both the cooking method and the pacing of service. Chef Bruno Marques relocated from Brazil in 2013 and built the kitchen around the tradition of sharing food cooked directly over heat. He combines cassava and tropical citrus with regional harvests to create straightforward plates that earn steady recognition from guides like Le Fooding.

The Seasonal Progression

Evening patrons encounter a blind tasting menu structured across four or five courses priced at fifty-five or sixty-nine euros. The progression highlights contrasts such as a creamy duck breast risotto or tender baby squid layered atop a smooth sunchoke purée. A streamlined midday service runs twenty-six euros for a three-course selection that updates weekly based on market availability.

Cellar Ambiance and Natural Wines

The dining area sits inside a repurposed wine cave characterized by exposed pink brick and deliberately low lighting. Heavy timber accents and smoked glass partitions soften the acoustics, creating a warm environment for extended gatherings. Guests can add a curated food and wine pairing for twenty-six euros to complement the natural selections drawn entirely from producers who avoid chemical interventions.

The former Algerian international rugby player Fred Medves traded in his jersey for natural wines. At Bonbonne wine shop in Lardenne, he met his new teammate Bruno Marques, who moved from Brazil to France for its culinary scene. Together, they built a very Toulouse-style wine shop with elegant decor that’s heavy on dark wood, metal and smoked glass. The former professional athlete serves meticulous shared plates at night, like a flavorful filet mignon beef carpaccio with soy sauce, wasabi mayo and anchovies; a heady risotto with duck breast; harmonious grilled baby squid served over a velvety sunchoke purée; or a spellbinding chocolate flan with chocolate coulis, caramel sauce and intensely flavorful chocolate nibs. At lunch, the winning set menu changes daily – croque monsieurs made with mortadella, homemade keftas, chocolate lava cake… There’s some pushing and shoving to get a table, but the people of Toulouse love a good scrum! // Auguste Marie
